Update Gemfile.lock and Podfile.lock

activesupport 7.2.3.1 was re-published on RubyGems with a tightened
minitest constraint (>= 5.1, < 6) but the lockfile still had the old
spec (>= 5.1). CI fetches fresh gemspecs and rejects the mismatch.
Regenerate the lockfile to pick up the corrected dependency metadata.

Also regenerate Podfile.lock via pod install --repo-update to pick up
the current hermes-engine checksum.
