refactor: Cleanup leftover artifacts relating to llms

What does this solve? What changed?

Removes the docs-side root llms.txt build path now that clerk.com serves it (see clerk#). The docs build continues to emit _llms/llms-full.txt.

Changes

• scripts/build-docs.ts — drop writeLLMs / overviewPath code path
• scripts/lib/config.ts — drop overviewPath from BuildConfigOptions
• scripts/check-redirects.ts — remove /docs/llms.txt and /docs/pr/[number]/llms.txt from PROTECTED_ROUTES

Test plan

• pnpm lint
• pnpm test
• pnpm build-docs produces _llms/llms-full.txt and no _llms/llms.txt
• check-redirects passes without the removed routes
