Bump cortex to 0.1.0 and bundles to 0.0.74 (#920)

## Summary
- Minor-bump cortex library chart from 0.0.60 to 0.1.0 due to breaking
change in `Client.AddRemote()` signature
- Patch-bump all bundle charts from 0.0.73 to 0.0.74 to reference the
new library version
- This PR should be merged before release PR #919
