Update jellyseerr and overseerr collections into seerr

There are two collections for overseerr and jellyseerr. Both softwares have officially been merged into just seerr.

So currently we have a limitation with renaming or deleting via hub updates. Obviously it would be good to make sure collections stay aligned with their actual application names but at the moment its not doable until we extend the hub updater to handle these type of changes.
