LaTeX is not supported in GitHub Markdown

Many of the README.md files use LaTeX in their markdown, but GitHub's flavor of Markdown does not support this. As a result, these files need to be rewritten to either not use LaTeX or to reference external LaTeX renderers.

I'm not going to have time to work much on this, so I've marked it as "help wanted." If anyone has the time and motivation, please fork this repo, make the changes, and submit a PR. Thanks!
