[documentation] Broken and outdated links

I don't have write access to this repo, and I don't know whether this component is pinned to a specific Java driver version, so I'm leaving these comments in an issue.

There are several outdated/broken links in the documentation (both .adoc and code comments):

• Old datastax docs links that 404, such as cql docs links.
• Java driver manual links (some pointing to DSE-only driver manual, some to DataStax Java driver manual). Depending on the version of the driver that cdc-apache-cassandra uses, these need to point to either:
  • 4.18 and later: The cassandra-java-driver repo (no formally published documentation exists yet since the donation)
  • 4.17 and earlier: https://docs.datastax.com/en/developer/java-driver/latest/index.html (specifically /latest/ unless there should be a specific version tagged)
