Example to deploy a STAC only

Issue

• I couldn't find many good helm charts for deploying a standalone STAC.
• eoAPI bundles stac-fastapi, which is great, but doesn't have it's own official chart.
• The solution could be to use eoAPI with all components disabled, except STAC.

The values.yaml

The key thing here is to:

• Disable all the other services.
• Ensure the config is correctly configured, along with rootPath and overrideRootPath set as below.
