* Add new images for lab 07 OIDC setup and scan workflow

- Added lab-07-oidc-setup.png (3948 KB) to illustrate the OIDC setup process.
- Added lab-07-scan-workflow.png (1389 KB) to demonstrate the scan workflow.

* feat: update screenshot capture logic and add new images for lab 02 PSRule scans

* feat: add new screenshots for labs 00, 01, and 04, and update screenshot capture logic in capture-screenshots.ps1
