Replace tui with ratatui

Just wanted to make you aware that the tui crate is no longer maintained. It has been forked and the successor project is ratatui: https://github.com/tui-rs-revival/ratatui

I hope this is useful to you. Would be a shame to miss out on bug fixes and new features.

I've tried migrating my project to ratatui before, but unfortunately not all the dependencies of projectable use it. Until they all do, it won't be possible to migrate. I'll keep the issue open though (until it becomes possible)!
