Overview
Updates JS dependencies across the repo and refreshes the pnpm-lock.yaml to match.

Also bumps tooling-related versions (notably pnpm via packageManager and the ESLint/TypeScript ESLint toolchain) and adds/keeps a pnpm.overrides pin for @next/eslint-plugin-next's glob dependency.
