More features for logging module (log to file, open as buffer)

It would be nice to log client/server logs to a log file rather than defaulting to vim.notify. I have a branch on my fork https://github.com/tomgeorge/eca-nvim/tree/feat/logging that I'm going to open up a PR on soon.

EcaLogs opens it in a popup and stores it the logs in a table I think, right?

Sorry man, I was in a rush and didn't read properly. You're implementing on a file. Thats a nice idea. I think that EcaLogs could read from this file to show on the popup, WDYT?

I believe having a great log details/ui we could get rid of all eca notifications?

It sounds like I can be a little more breaking in my PR then. I was trying to keep notify support if you wanted it and not do a big. Can I deprecate the notification stuff in favor of logging to a file? I think notifying is still worth it when something fails but it should still be logged.

Also @ericdallo when you get a second:

Right now I'm logging client and server logs, as it doesn't look like eca writes out a log file currently. Am I wrong about that?

@tomgeorge correct, eca just logs to stderr which is enough IMO, but feel free to offer options to log to files.
