Better mock data

Currently our mock data is pretty limited in terms of what attributes we have but also in preparation for more real ones.

It would be good to replace it with a JSON that gets loaded (that's independent of the infrastructure team) but with also more real data.

@zouharvi do you have any ideas as to what would more "real data" look like? Happy to take a stab at this later :)

Unfortunately this is pretty open and waiting on the infrastructure team on what they'll be collecting.

Still, the current data we're using is really just LLM-generated placeholder, so the fact we're not getting much insight from the website (just yet) might be caused by that.
