docs: update screenshots and description of GNOME#717

Description
this updates a lot of things, such as screenshots, descriptions, and some minor tweaks as the previous docs before this commit is very outdated. I have also added the screenshots of my previous PR as a
.pngin the configuration folder instead of uploading it directly to github to prevent images being unavailable if I accidentally delete a branch on my fork. All the changes is inline with the current upstream version of GNOME.
