This pull request adds a new Maven profile named bulkTests to the java-showcase pom.xml file. This profile is configured to skip tests when activated, which is intended for use when testing other parts of the monorepo. I have no feedback to provide.

The showcase integration tests require starting the gapic-showcase server and run as part of the showcase GitHub workflow. When running the "bulk tests" (entire monorepo minus handwritten modules), we should skip the tests.
