We have to update to a released SDK version to release the gRPC extension.
We could have grafbase-sdk-012 and grafbase-sdk-014 deps in the workspace, but we might as well update everything.
Also, get the tests back running in CI. They have not been running for a long time. That involves removing the SDK version from the matrix, since no extension matched the SDK versions we had there. And since we are only using one SDK version for the whole repo, we don't even need the matrix in principle (just to test different versions of the CLI and gateway with the same version of the SDK).
