Update Mockttp for perfect WS mirroring, and perf & dep improvements

This updates Mockrtc to match, bringing in equivalent dep reductions &
updates (most notably around GraphQL). Perf improvements in Mockttp are
limited for HTK since it enables every possible feature but probably
still 10-20% proxy throughput boost.
