docs: update seam check status after SHOULDs

Verified integration seams:
- SEAM-1C: AST interchange format (serde roundtrip works)
- SEAM-5A: Document collection schema (formatrix-db)
- SEAM-5B: Edge collection schema (formatrix-db)

All tests pass:
- formatrix-core: 40 passed
- formatrix-db: 5 passed
- formatrix-pipeline: 0 (stubs only)
