docs(bots): eliminate residual Nix references — Guix-only

Nix is retired estate-wide (owner ruling 2026-06-05); the hazard is competing
build tooling. Reconciles stale "use Nix / add a flake / Nix reproducible
builds" guidance in gsbot, echidnabot, and the-hotchocolabot docs (none ship a
flake.nix). Guix (guix.scm) is the sole packager.
