add .gitattributes and bump version to 2.4.1

Excludes development directories (tests, docs, scripts, vendor), editor
config, AI tooling, build artefacts, and lock files from Composer installs
and git archives. Runtime directories (src, config, templates, layouts,
css, snippets) are kept so the tool remains functional after composer install.
