[MAINT] Fix missing docs links

Before the change?

• I noticed that at least one docs page is not being linked to in the provider docs: https://registry.terraform.io/providers/integrations/github/latest/docs/data-sources/organization_app_installations

After the change?

• Updated github.erb with all missing docs links in hopes of getting docs to show up

@stevehipwell TBH no idea. But since there are existing docs missing from the registry I thought this could be worth a shot?

Do the missing docs line up with this file? Also are they missing from the index or completely? Maybe we just prioritise my docs PR and bin this whole pattern?
