test: add comprehensive security and DoS protection tests (#73)

- Add SecurityTests.cs with 26 tests for query limits and DoS protection
- Test filter count, group count, depth, value length, and include depth
limits
- Test page size clamping and custom limit configuration
- Include stress tests for performance validation
- Update roadmap checkboxes for completed Phase 3 items
