feat: add support for heading

This PR adds support for heading, magneticHeading, trueHeading, headingAccuracy, and course

Context

Tests

Tested on all platforms with ODC sample app and O11 sample app. Search for RMET-4897 on ODC Studio and Service Studio.

As a result of our discussion, I set the iOS lib version to use 2.1.1 which is compiled with Xcode 16. Long term we should consider dropping xcframeworks, but for now this resolves the build issues in MABS 11.2

Tested in Android and iOS and it seems to be working properly
