docs: add ADOPTERS.md with Platform Mesh as initial adopter

Platform Mesh (platform-mesh.io) uses kube-bind as the cross-cluster
service binding layer for its multi-cluster platform, enabling users to
add kube-bind as a provider and automatically create bindings between
workload clusters and managed services.
