This PR updates the Mintlify docs build configuration to prevent archived documentation snapshots under /versions/ from being published/searched, and cleans up redirects that pointed to non-existent legacy paths.

Summary
/versions/to.mintignoreso archived release snapshots (2-8-x through 3-7-x, pluslegacy/) are excluded from the Mintlify build and no longer surface in site search.docs.jsonthat pointed intoversions/legacy/en/plugins/schema-definition/. Those destination files do not exist in the repo and were already broken.
