fix: Update Java version to 17

Background

• The CI workflow was previously configured for an older Java version and a legacy Ubuntu runner. With the project now standardizing on Java 17, the workflow needed to be updated to ensure compatibility with the latest Gradle builds. Additionally, the target branch was changed to main to align.

What Has Changed

• Set target branch to main
• Update runs-on to ubuntu-latest
• Gradle builds run with Java 17
