chore: update Kubernetes documentation for Plane version 2.3.1

- Updated PLANE_VERSION to v2.3.1 in environment variable setup.
- Changed installation command from `helm install` to `helm upgrade --install`.
- Revised example values in the documentation to reflect the new version.
- Added new section for Docker Registry configuration options.
