Update servers.md to add Umple (#2241)

Adding Umple lsp server to the list of language servers. It has been tested on many clients including VSCode, NeoVim, BBEdit, Zed etc. Umple itself has been actively developed for over 15 years and is widely used for modeling data and state machines
