Feature request: ability to generate enums as Literal

Adding a enum variant to the schema should not break clients, yet it does because of pydantic validation.

It would be nice to have a toggle to generate enum values as str, but annotated with Literal.

Hi @Object905, yes, it can be frustrating, but it's very helpful for tracking changes in the GraphQL server and staying up to date with the latest version. However, I understand that if projects aren't synced together and one makes a change without the other's knowledge, it can break the application. If you'd like, feel free to propose a solution in the pull request with an optional setting to switch between approaches.
