docs: modernize README and refine architecture diagram

- Restructure README following reference repository patterns
- Add Tech Stack table with GitHub links
- Add Project Structure, Environment Variables, and Command Summary sections
- Refine architecture diagram with color-coded dependencies
- Remove redundant sections and assets directory
