Reorganize EXAMPLES.md: visual impact ordering, real-world apps first

- Keep real-world apps (ServerHub, LazyNuGet, LazyDotIDE) at the top as social proof
- Reorder showcase examples by visual impact: DemoApp hero shot first, then CanvasDemo, ConsoleTop, HighFreqDemo, CompositorEffects, etc.
- Collapse 9 no-screenshot examples into a compact table under "More Examples"
- Reorder Feature Matrix to match new showcase order
- Remove emoji category headers, use cleaner tiered structure
