fix: stabilize renovate dependency test fixtures

Summary

• remove deprecated baseUrl from isolated fixture tsconfigs for TypeScript 6
• export plain Nuxt config objects in fixtures that Nuxt 4.4 no longer typechecks through defineNuxtConfig
• preserve fallback overloads for unknown useFetch/useLazyFetch routes while keeping generated auth route inference
