docs: update development progress and next-step roadmap based on codebase scan

- ROADMAP.md: mark Phase 2 rendering items as complete (filter drawer, swipe
  actions, record nav, widget grid, live dashboard data all implemented),
  update milestone versions for 4B/5B as complete
- PROJECT-STATUS.md: fix test counts (413/45 suites, not 375/34), remove
  outdated Phase 5B "blocked" note, update footer status
- NEXT-PHASE.md: complete rewrite replacing outdated "blocked" content with
  Phase 7 (Final Validation) and Phase 8 (App Store Launch) roadmap
