Instalation, what docker compose file should I use?

Hello.

There is a Docker Compose file in the main folder in two versions updated two months ago and another one in the quickstart folder updated seven months ago. Which one should I use and what are the differences between them? The documentation mentions using the older one (from quickstart folder), but before I start using it I would prefer to ask.
