This is really useful, and should be integrated into a production ready solution.
Many enterprise environments use NFS storage, and have private clouds/private OCP clusters. Being able to leverage dynamic PVs using this makes life much easier!

The problem with the solution is, it creates only a subdirectory there is not quota management at all. That means if one PVC use all the available disk space all other PVC are affected. I recommend a solution with better storage integration. For example NetApp Trident, Dell EMC CSI OPerator,.. there are a lot of options out there. A single Linux box with an NFS server is only sufficient for PoC or tests. IMHO.

There are more aspects to cover with a propper storage system: high availability, backup, recovery,...

I just had a thought, maybe this operator could take a similar path to how ovirt/RHV handles NFS shares

The oVirt/RHV implantation "speaks" with the RHV/oVirt API there is no Operator. It might be a Kubernetes in-tree storage driver or CSI. I don't know right now.
