Fix signature of Muxer::add_stream_from_encoder

The method currently accepts E: AsRef<ffi::AVCodecContext> as encoder, which wrongly permits passing decoders.

The previous solution of using "generic::Encoder" is not sufficient. I suggest using an Encoder trait instead.
