fix(deploy-infra.sh): use minikube embedded kubectl

• use a function to alias kubectl to the kubectl that's part of minikube to remove a dependency
• explicitly use parca-demo profile as otherwise commands fail unless you have an additional tool to manage kubernetes profiles, which might not be the case on demo boxes
