docs(changelog): fix Releases link to point at github.com/pepabo/wip-ui

The Changelog.mdx referenced github.com/hosting/wip-ui, which was the
path on the internal GHE (git.pepabo.com/hosting/wip-ui) and does not
exist on public GitHub. Swap the org segment to the real public repo
path before flipping the GitHub repository visibility to public.
