The old version had issues with the License metadata
- Replace manual `pip` installation of `build` and `twine` with Poetry's dependency groups. - Update workflow commands to use `poetry install` and `poetry run`. - Add build-specific dependencies to `pyproject.toml`. - Update the lock file accordingly.

(Well in #789 I skipped the failing test so the pipeline is green but it was failing before that) |

CI in the master branch is failing because of unexpected behaviour from the latest gherkin_official parser versions. It will need to be addressed separately. |
