Scope is intentionally narrow:
- Rename folder, libraryItemId, and display name from
  `quixlake-timeseries(-destination)` to `lakehouse-sink` /
  "Quix Lakehouse Sink" — the new name LakehouseService /
  LakehouseImageRegistry on the Portal side aligns with.
- Drop `CATALOG_URL` and `CATALOG_AUTH_TOKEN` from the connector-setup
  form. On Quix Cloud, these are auto-injected by Portal at bind time
  when the workspace has a Lakehouse provisioned (Portal-side change:
  PR #10269 on Quix.Portal.Backend, branch task/sc-72223-sinks-refactor).
  Outside Quix Cloud, set them as deployment variables on the deployed
  sink as you would any other variable.
- `DeploySettings.blobStorage.bind: true` was already present.
- Test fixtures + module docstrings get the rebrand text-edit so the
  on-disk strings match the new name; no other behaviour changes to
  main.py or the verify scripts.

> Breaking: any client resolving the connector by the old library ID
> `quixlake-timeseries-destination` will need updating.
