chore!: upgrade to Node.js 22 LTS

BREAKING CHANGE: Minimum Node.js version is now 22.12.0

- Update .nvmrc from lts/fermium (Node 14) to 22.12.0
- Add engines field to root package.json (>=22)
- Update engines field in example/package.json (>=22)
- Update CI workflows to use Node 22.12.0
