Enhance Auto-Label & Project Workflow for Issues and PRs

Description

This update improves our GitHub Actions workflow for automatically labeling pull requests and issues, and populating GitHub Project fields.

Changes Include

• Automatically detects PR/Issue type, priority, and difficulty based on title, body, and changed files.
• Adds size and level labels for pull requests based on changes.
• Assigns platform-specific labels (mobile, desktop, API, database) for issues.
• Dynamically updates Project V2 fields (Status and Type) based on labels.
• Automatically assigns milestones if matching milestones exist.
• Removes duplicate labels before applying to PRs/issues.
