This PR generates README.md from the qmd file as in other repos.

Nice :) can you split up the PR into two though? One for the Quarto website updates and another for the justfile updates?

I don't think we need to set the kernel explicitly here, do we? Or do we want to avoid using quarto's autodetection of which kernel to use?
