Reduce bundle size

Reducing our bundle size might be good for end users. I'm attaching a screenshot of a visualization, seems like the biggest thing seems to be ag-grid-react (maybe we can consider using a headless library like @tanstack/react-table?) and other external libraries.

for context—reducing bundle size was never a big concern for me given that, a lot of the time, people will be accessing hydrant using mit wifi

but it is a worthy endeavor, and i would support moving off ag-grid-react to tanstack table, because it's probably gonna be better known in the future?

that's fair, we added analytics recently and only ~80% of users are in the US (and around ~20% are on mobile) which is why I thought it could be good to optimize. @psvenk any thoughts?
