I want to define a separate openapi page for endpoints with paths /api/.* How can I do this?

Are you specifying which profile you want to have included in your configuration? For example:

mp.openapi.extensions.smallrye.scan.profiles=external

quarkus.smallrye-openapi.user.scan-profiles=user
quarkus.smallrye-openapi.order.scan-profiles=order
like in documentation and openapi.yaml for security schemes components in src/main/resources/META-INF/openapi.yaml
