FR: Add Prometheus support

Add support for exposing custom application metrics via prometheus.

If I may, I'd recommend using OpenTelemetry internally and expose metrics as Prometheus endpoint. Even though Prometheus is the leader for metrics nowadays, this will allow you to later offer support for other platforms without changing the core.
