Add pixel probe, EXIF orientation & sorting

Add pixel probing and area sampling (per-pixel read, area stats, formatting), EXIF orientation support and source/display UV transforms, and image coordinate mapping utilities. Introduce sibling-image sorting modes (ByName, ByPath, ByImageDate, ByFileDate) with reverse option and pref persistence; refresh logic now uses the sorter. Build longinfo rows from ImageSpec for the Info panel and revamp Info and Preferences UI layouts. Add fullscreen/fit-window actions, slide-show controls, and various UI/status message improvements. Vulkan changes: create/destroy a dedicated nearest sampler and ImGui texture/descriptor for the pixel closeup view. Also add miscellaneous helpers (unaligned reads, datetime/file-time helpers), clamp UI values, and probe state initialization when loading images.
