Approved for now, as you said we need to put something in the backlog for adding proper options for booleans/dropdowns in the app UI though

Essentially all this does is let you change the backend api image to any arbitrary value in the azimuth UI.
This is a stopgap change to test vllm-omni. In the future, I'll turn it into a whole new Azimuth app because it needs a new UI etc
