docs(README): add Arazzo 1.1.0 to supported spec versions#145

The grammar now supports the Arazzo 1.1.0 runtime expressions (inlined reference grammars, $self, $inputs/$outputs JSON Pointers) per the merged OAI/Arazzo-Specification#454. List 1.1.0 alongside the previously supported versions. Co-Authored-By: Claude Opus 4.8 <noreply@anthropic.com>
