ci: Update setup-java in workflows to use temurin jdk

AdoptOpenJDK has moved to Eclipse Temurin https://github.com/actions/setup-java#supported-distributions 
please consider changing to the 'temurin' distribution type in your setup-java configuration.

Chaning "Setup Java" to 👇 should fix, can be done outside of this PR. Other jobs also need it.

          distribution: 'temurin'
