Summary

Expands the API coverage document from a placeholder roadmap into an endpoint-level matrix based on the Termii docs and provided Postman collection.

What changed

• Added source references for the Termii docs and Postman collection.
• Added a status legend for implemented, planned, deferred, and needs-verification coverage.
• Added foundation coverage with issue/PR traceability.
• Added endpoint coverage for Messaging, Token, and Insights APIs.
• Added deferred coverage for WhatsApp templates, campaigns/phonebooks, email notification APIs, and webhook/event documentation.
• Added Postman collection reconciliation and implementation rules for future endpoint PRs.
